Beverages
Real Lemonade
1 quart filtered water
2 organic lemons juiced (about 4 oz)
2 T organic agave nectar
1. Mix, shake well and drink over ice.
Mint Water To Go
1 bottle Trinity water (1.5 liter)
1 pinch high mineral sea salt
1/4 bunch spearmint leaves
1 T goji berries (optional)
1. Pour 1/2 cup of water out of the bottle and put all the ingredients
in and place cap.
2. Let steep overnight, Grab and go in the AM.
Morning Jump Start
2 organic oranges juiced
1/8 t cayenne pepper (1/4 t for really dead battery)
1. Stir pepper in juice. Chug.
Soup
Pineapple Cucumber Mint
1 organic pineapple, peeled
1 or 2 organic cucumbers
3 sprigs of homegrown mint (top 3 inches of a stem)
1. Blend all in a Vitamix for 30-40 seconds.
2. Sit down and chill out.
Lemon Lime Thai Coconut Soup
1 young coconut, meat and juice
1/4 bunch cilantro
handful of parsley
1 t red jalapeno, dryed (1/2 pepper fresh)
1 c filtered water
1 organic lemon, juiced
1 organic lime, juiced
1 t sea salt
1 T dulse, granules (or more if you love dulse)
1. Blend all ingredients together in a blendor. Optionally you could just
minced the herbs and coconut meat and mix everything together by hand.
This would give you a more traditional looking soup.
Sides
Bruschetta
4 organic tomatoes, diced
1 small onion, diced small
2 sprigs organic basil (top 3 inches, 9-10 leaves)
1 T organic olive oil
1 t sea salt
1. Sprinkle salt over tomatoes and let stand 1 hour.
2. Mix all ingredients together (let sit for 2 hours or more)
3. Serve (over sunflower bread or flax crackers if desired)
Marinated Asparagus
1 bunch organic asparagus
Marinade:
1/4 c Nama Shoyu
1 T organic onion
1 organic lemon, juiced
2 T organic balsamic vinegar (or Braggs unpasteurized apple cider vinegar)
1. Cut 1" off the bottom of the stems and save for your compose heap,
then cut the stalks in half.
2. Mix marinade and pour over asparagus.
3. Marinate overnight and serve at room temperature.
(serves 4)
Hot Lemon Kale
1/2 bunch organic kale (ok 2/3's of a bunch), rinsed in filtered water
1 organic lemon juiced
1/4 c Nama Shoyu
2 T organic onion minced (or 1/4 medium onion sliced)
1 T stone crushed olive oil
1/8 t habenaro powder
1. Shred kale into thin strips with a knife.
2. Mix remaining ingredients together and toss with kale.
3. Let marinate 3 hrs or overnight, shake up now and then if you can,
serve at room temperature.
(serves 4 to 6)
Entrees
Marinated Portabella
4 Portabella mushrooms, stems removed
1/4 nama shoyu
1 T apple cider vinegar
1 t balsamic vinegar (optional)
1/2 t black pepper
1. Mix all ingredients except mushrooms..
2. In small container place mushrooms and pour marinade over them.
3. Shake periodically and let stand over night.
4. Slice in strips and serve over salad or squash pasta.
Straw and Hay
Pasta:
1 organic zucchini
1 organic yellow squash
1/2 carrot, sliced, julienned or grated
Sauce:
1/4 c stone crushed olive oil
2 cloves organic garlic, crushed or pressed
1 t organic basil, dryed (or 1 T fresh, minced)
1 t organic italian herbs mixture, dryed (or 1 T fresh mixture of rosemary,
oregano, thyme & sage.
1/8 t red jalapeno, dryed (1 t fresh, minced)
optional: 1/2 t sea salt
1. Spirooli-ize the squashes, for yellow use the small blade, for zucchini
use the large blade (you could also julienne the squashes by hand or use
a saladacco and make angel hair).
2. Mix squash with carrots
3. Mix remaining ingredients together for the sauce
4. Toss sauce with veggies and serve. Garnish with sprouted, dehydrated
sunflower seeds and dulse granules.
(serves 2)
Goji Apple Salad (for two)
3 Organic Apples, Diced
1/4 c Organic Walnuts
2 T Pine nuts
2 T Raw Sprouted Organic Sunflower seeds
1/4 c Organic Raisins
1/4 c Tibetan Goji Berries, soaked in water 3 hours
1. Toss all ingredients together.
2. Serve over mixed greens with sweet dressing if desired.
Desserts
Chocolate Pecan Brownies
40 raw organic cacao beans
3/4 c organic dates
1 1/2 c organic spourted almonds (can be dehydrated)
4 T raw organic agave nectar
1/8 t sea salt
garnish: chopped organic pecans
1. Blend well in food processor.
2. Form brownies between sheets of wax paper.
3. Garnish or lightly press pecans into the top.
Wild Berry Fondue Chocolate Sauce
1/4 cup cacao nibs (peeled cacao beans)
1/2 cup raw organic agave nectar
1. Blend until very smooth in Vitamix. Mixture will get slightly warm
2. Chill in refrigerator or serve warm.
3. Pour sauce over fresh berries or use as raw fondue sauce.
(This can also be used to make quick chocolate smoothies)
Smoothies
Watermelon Bliss
1 bowl of organic watermelon pieces (shave off only outer green layer,
use white parts & seeds)
1. Fill blender with chunks of watermelon
2. Blend. Try using no water. You will need to work the melon down into
the blade using a tamper.
3. Drink.
Chocolate Blackberry
1/2 pint organic blackberries
1 organic banana
12 raw organic cacao beans
1 T (heaping) organic mesquite
2 c filtered water
1 T agave nectar
1. Blend all ingredients. One trick with cacao beans is to blend with
half the liquid until the beans are blended then add the rest of the liquid
and blend again (and/or some ice for a icy smoothie).
Awaken the Beauty Within
3 c organic grapes with seeds
1 organic orange, peeled
1/4 c cayenne
1 1/2 c filtered water
1 t MSM powder (or 2)
1. Blend all ingredients well (best in high powered blender)
