Irish moss is a red seaweed. Irish moss is a nourishing super star. Carrageenan comes from Irish moss and is used as a thickening agent in many products.
Irish moss can be used is a natural vegan alternative to gelatin. A quarter cup will thicken about two cups of liquid. In Ireland, this short, bushy, red sea plant was traditionally boiled with milk and sugar to release the gelling agent (carrageen), then cooled to form a pudding, sometimes called Blancmange.
At the former Sprouts Cafe' in Atlanta, GA, run by Gideon and Jackie Graff, they used to sell a drink called Irish Moss. It was a thick satisfying chocolate beverage packed with nutrition. This drink was made with Irish moss combined with macadamia nuts, banana, agave nectar, carob and spirulina! It was a great drink. It may still be available through some local Atlanta health food stores.
